"Yukinoshita Carrots (organic native carrots)" by Kenichi Kumo
"Arigato Farm" in Hida City grows a variety of vegetables in organic, pesticide-free agriculture. One of them, Komatsuna, won the first prize for the third consecutive year since 2020 at the "Organic Eco Festa" sponsored by the Japan Organic Agriculture Promotion Association. Tomatoes are also wonderful, and the tomato juice made with non-standard products is fresh as if you had a raw tomato, and you will feel energized when you drink it. The carrot under the snow (Kuroda Gosun) introduced this time is a native variety of Hida. In the second half of the growing season, we give original liquid fertilizer with plenty of amino acids and plant minerals to grow them into nutritious and nutritious carrots. Mr. Unei is working hard with his colleagues as the chairman of the "Hida City Organic Agriculture Promotion Council", commonly known as V7 (Vegetable Seven). Such activities were highly evaluated, and in 2023, it was certified as one of the first organic farming advisors in Gifu Prefecture.

"The soil will not be less than 0℃. The snow covers and protects "these children" from the cold." I was shaken by Mr. Unei's words. " These children are carrots under the snow grown by Unei without organic pesticides. In Hida, it starts to snow around December and covers the fields. Thanks to the snow protecting it from the cold like a comforter, carrots store sweetness and nutrition without freezing and wait for the harvest. I also experienced carrot digging, but the beauty of carrots that appeared from under the snow! It was glossy and healthy, and when I gnawed in the field, the body was stuffed and the taste was strong, and I felt that life came into my body as it was. What we propose is cheese fondue so that you can feel the charm directly. Just serve vegetables that are also organic and pesticide-free with carrots under the raw snow and serve them with cheese stretched with white wine. The thick cheese enhances the richness of the taste of vegetables and makes it an exceptionally rich dish. When I look at Unei's vegetables, I always think of him saying "Thank you" and "How are you" to the crops while walking in the field. It seems that this has already become a habit, and it is a manifestation of Mr. Unei's belief that gratitude should be conveyed to plants. In addition, that love is also directed to those who work together. " Thank you Farm" has been working on agricultural welfare cooperation for many years, accepts people who are difficult to work for a long time, and conducts employment training through agricultural work. In fact, it seems that there are many people who regain their physical and mental health by touching the soil. Pesticide-free cultivation is a battle against weeds, so we pull out the grass, make soil, and grow delicious vegetables with everyone's power. " Every time I go to Hida, I feel happy as a chef to meet the agriculture that "Thank You Farm" aims for and its wonderful vegetables.
